This meal is one of my go to favorite easy meals. The rabbit meat is perfectly seasoned and so flavorful! And the sauce is quick and easy to make. My family loves this Ranch Rabbit recipe with mashed potatoes. Spooning this sauce over some warm mashed potatoes is delicious.

How to Make It
Prepare the Rabbit:
- Season the rabbit meat with Italian seasoning, salt, and pepper.
- Brush one side of each piece with melted butter.
- Heat olive oil in a skillet and sear the rabbit for 4-5 minutes per side until golden brown. Set aside
Make the Sauce:
- Combine the sauce ingredients in a skillet over medium heat and let it gently bubble for 5 minutes.
Cook the Rabbit in Sauce:
- Return the rabbit to the skillet and spoon the sauce over it.
- Partially cover the skillet and simmer for 10 minutes.
Serve:
- Serve the Creamy Ranch Rabbit with mashed potatoes or rice with vegetables.

Ingredients
- 4 rabbit thighs
- 2 teaspoons Italian seasoning
- Salt/Pepper
- 2 tablespoons butter melted
- 2 tablespoons olive oil
- Sauce
- 3 Tablespoons Ranch seasoning
- ½ teaspoon onion powder
- 1 ½ cups milk
- 1 cup sour cream
- 10.5 oz. cream of chicken soup
Instructions
Season & Sear Rabbit
- Season both sides of the rabbit with Italian seasoning, salt, and pepper. Brush one side of each piece with melted butter.
- Heat olive oil in a large skillet over medium-high heat. Place 2-3 pieces of rabbit in the pan, buttered side down, ensuring there's space around each piece.
- Saute for 4-5 minutes on each side until a golden brown crust forms. Remove and set aside. Repeat with the remaining rabbit pieces.
Make the Sauce
- Remove any excess oil from the skillet if necessary. Add the sauce ingredients to the skillet over medium heat and stir until combined.
- Let the sauce gently bubble and reduce for about 5 minutes.
- Return the rabbit to the skillet and spoon the sauce over each piece.
- Partially cover the skillet and allow the rabbit to heat through and absorb the flavors for about 10 minutes.
Notes
Add a splash of oil if necessary.
Adjust the heat as needed during cooking.
Avoid disturbing the chicken while it cooks to achieve a good sear. It will release from the pan once the crust has formed.
