Start by cutting 1-2 pounds of beef into small pieces
Season them with black pepper, thyme, or Italian seasoning
Coat the beef in flour
Heat olive oil in a large skillet and brown the beef on all sides
Move the beef to a slow cooker
Add 32 ounces of beef broth
Add 5-6 medium potatoes, 4 large carrots, and 1 1/2 cups of frozen pearl onions. For more flavor, add a chopped bell pepper, a celery stalk, or a cup of peas.
Let the stew cook on low for 7-8 hours or on high for 3-4 hours
Garnish with fresh parsley. It adds color and freshness to your stew.
