Ingredients
  

  • 2 lbs of beef heart trimmed and cut into 1-inch cubes
  • 1 large onion chopped
  • 2 cloves garlic minced
  • 3 carrots chopped
  • 1 cup beef broth
  • 1 teaspoon cumin paprika, oregano, and cornstarch
  • 1 tablespoon butter
  • Extra virgin olive oil
  • Fresh parsley chopped

Instructions
 

  • Start by cutting 1-2 pounds of beef into small pieces
  • Season them with black pepper, thyme, or Italian seasoning
  • Coat the beef in flour
  • Heat olive oil in a large skillet and brown the beef on all sides
  • Move the beef to a slow cooker
  • Add 32 ounces of beef broth
  • Add 5-6 medium potatoes, 4 large carrots, and 1 1/2 cups of frozen pearl onions. For more flavor, add a chopped bell pepper, a celery stalk, or a cup of peas.
  • Let the stew cook on low for 7-8 hours or on high for 3-4 hours
  • Garnish with fresh parsley. It adds color and freshness to your stew.
