- 8 cups cooked chicken breast shredded or chopped
- 1 ½ cups mayonnaise
- ¾ cup sour cream
- 3 tablespoons Dijon mustard
- 1 tablespoon lemon juice
- 1 teaspoons salt
- 1 teaspoon black pepper
- ½ teaspoon garlic powder
- 2 cups celery finely diced
- 1 cup red onion finely diced
- 2 cups red grapes halved
- 1 cup sliced almonds or chopped pecans
- ½ cup fresh parsley chopped (optional)
Place the shredded or chopped cooked chicken in a large mixing bowl.
In a separate bowl, whisk together the mayonnaise, sour cream, Dijon mustard, lemon juice, salt, black pepper, and garlic powder until smooth.
Add the diced celery, red onion, grapes, almonds, and parsley to the chicken.
Pour the dressing over the chicken mixture and stir gently until everything is evenly coated.
Cover and refrigerate for at least 1 hour before serving to allow the flavors to blend.
Serve on croissants, sandwich bread, crackers, or lettuce wraps.
For faster preparation, use shredded rotisserie chicken.
This chicken salad can be made up to 24 hours in advance and stored in the refrigerator until ready to serve.
If the salad thickens after chilling, stir in a little extra mayonnaise to loosen the texture.
