Ingredients

  • 4 rabbit thighs
  • 2 teaspoons Italian seasoning
  • Salt/Pepper
  • 2 tablespoons butter melted
  • 2 tablespoons olive oil
  • Sauce
  • 3 Tablespoons Ranch seasoning
  • ½ teaspoon onion powder
  • 1 ½ cups milk
  • 1 cup sour cream
  • 10.5 oz. cream of chicken soup

Instructions

  • Season & Sear Rabbit
  • Season both sides of the rabbit with Italian seasoning, salt, and pepper. Brush one side of each piece with melted butter.
  • Heat olive oil in a large skillet over medium-high heat. Place 2-3 pieces of rabbit in the pan, buttered side down, ensuring there's space around each piece.
  • Saute for 4-5 minutes on each side until a golden brown crust forms. Remove and set aside. Repeat with the remaining rabbit pieces.
  • Make the Sauce
  • Remove any excess oil from the skillet if necessary. Add the sauce ingredients to the skillet over medium heat and stir until combined.
  • Let the sauce gently bubble and reduce for about 5 minutes.
  • Return the rabbit to the skillet and spoon the sauce over each piece.
  • Partially cover the skillet and allow the rabbit to heat through and absorb the flavors for about 10 minutes.

Notes

  • Add a splash of oil if necessary.
  • Adjust the heat as needed during cooking.
  • Avoid disturbing the chicken while it cooks to achieve a good sear. It will release from the pan once the crust has formed.
