Ingredients

  • 1/2 cup water
  • 1 cup honey or white sugar for a more neutral flavor
  • 1/4 cup dried culinary lavender buds

Instructions

  • Combine Ingredients: In a small saucepan, combine the water, honey (or sugar), and dried lavender.
  • Heat the Mixture: Place the saucepan over medium heat. Stir occasionally until the honey or sugar has fully dissolved and the mixture just begins to simmer (about 3–5 minutes). Do not let it boil.
  • Steep the Lavender: Remove the pan from heat and cover. Let the lavender steep for 15 minutes to infuse its floral flavor.
  • Strain and Store: After steeping, strain the syrup through a fine mesh sieve or cheesecloth into a clean glass jar or bottle. Discard the lavender buds.
  • Cool Completely: Allow the syrup to cool to room temperature before sealing with a lid. Store in the refrigerator for up to 2 weeks.

Notes

  • Use culinary-grade dried lavender to ensure it’s safe for consumption and free of pesticides.
  • Flavor tip: Steep only 10–15 minutes, any longer, the flavor becomes bitter.
  • This syrup is perfect in iced lattes, hot coffee, tea, sparkling water, or baked goods glazes.
  • You can substitute white sugar for a more traditional clear syrup if you don’t want the floral notes of honey.
