Ranger Cookies

These classic Ranger Cookies are soft, chewy, and packed with oats, crispy rice cereal, and sweet coconut. An old-fashioned cookie recipe that’s easy to make and perfect for holidays, potlucks, or everyday baking.

Ingredients

  • 1 cup butter softened
  • 1 ¾ cups granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • 2 cups quick oats
  • 2 cups crispy rice cereal
  • 1 cup shredded coconut

Instructions

  • Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  • In a large bowl, cream together the butter and sugar until light and fluffy.
  • Beat in eggs one at a time, then mix in the vanilla.
  • In a separate bowl, whisk together flour, baking soda, baking powder, and salt.
  • Gradually add dry ingredients to the wet ingredients, mixing just until combined.
  • Fold in oats, rice cereal, and shredded coconut until evenly distributed.
  • Scoop dough onto prepared baking sheets, spacing about 2 inches apart.
  • Bake for 10–12 minutes, or until edges are lightly golden.
  • Cool on the pan for 5 minutes, then transfer to a wire rack to cool completely.

Notes

  • For softer Ranger Cookies, slightly underbake and let them finish setting on the baking sheet.
  • You can substitute half the sugar with brown sugar for a deeper flavor.
  • Store cookies in an airtight container at room temperature for up to 5 days.
  • These cookies freeze well both baked and unbaked.
     
    Ranger Cookies are very forgiving and easy to customize.
    • Butter: Can be replaced with margarine or plant-based butter if needed.
    • Sugar: Swap up to half of the granulated sugar with brown sugar for a richer flavor.
    • Coconut: If you’re not a coconut fan, you can reduce or omit it, though it’s traditional in classic Ranger Cookies.
    • Oats: Quick oats are traditional, but old-fashioned oats can be used for a chewier texture.
    • Add-ins: Chocolate chips, chopped nuts, or raisins are popular additions without losing that classic Ranger Cookie taste.
