Slow Cooker Glazed Carrots

Ingredients

  • 5 pounds carrots peeled and sliced (or baby carrots)
  • 1/2 cup brown sugar
  • 2 teaspoons dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 10 tablespoons butter sliced
  • 3/4 cup water

Instructions

  • Peel and slice the carrots if using whole carrots. Add them to a large slow cooker.
  • Sprinkle the brown sugar, thyme, salt, and black pepper over the carrots.
  • Place the sliced butter evenly over the top.
  • Pour the water into the bottom of the slow cooker.
  • Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours, until carrots are fork tender.
  • Stir before serving to coat the carrots in the glaze.

Notes

  • For a richer glaze, remove the lid during the last 30 minutes of cooking to allow the sauce to thicken.
  • Fresh thyme can be used in place of dried (use 1 tablespoon fresh thyme).
  • These carrots pair beautifully with roasted meats and holiday meals.
