Strawberry Kiwi Popsicles

These refreshing strawberry kiwi popsicles are made with fresh fruit, creamy yogurt, and naturally sweetened with honey. A healthy and delicious homemade popsicle recipe that’s perfect for hot summer days!

Ingredients

Strawberry Layer (Top):

  • 2 cups fresh strawberries hulled
  • 2 –3 tablespoons honey to taste
  • 1 teaspoon lemon juice

Yogurt Layer (Middle):

  • 2 cups Greek yogurt plain or vanilla
  • 2 –4 tablespoons honey if using plain yogurt
  • 1 teaspoon vanilla extract optional

Kiwi Layer (Bottom):

  • 4 –5 ripe kiwis peeled
  • 1 –2 tablespoons honey
  • 3 tablespoons yogurt

Instructions

Prepare the Strawberry Layer (Top – goes in first):

  • Add strawberries, honey, and lemon juice to a blender. Blend until smooth.
  • Pour evenly into popsicle molds, filling each about 1/3 full.
  • Freeze for 45–60 minutes, or until mostly set but slightly tacky.

Prepare the Yogurt Layer (Middle):

  • In a bowl, mix Greek yogurt with honey and vanilla extract (if using).
  • Spoon or pipe the yogurt layer over the strawberry layer until molds are about 2/3 full.
  • Freeze again for 45–60 minutes until set.

Prepare the Kiwi Layer (Bottom – added last):

  • Blend kiwi, honey, and yogurt (if using) until smooth.
  • Pour over the yogurt layer, filling molds to the top.
  • Insert popsicle sticks and freeze for at least 4–6 hours, or until completely solid.

Remove & Serve:

  • Run molds under warm water for a few seconds to release popsicles easily. Serve immediately.

Notes

  • Always pour layers in reverse order (top → bottom) for the correct final look.
  • Let each layer partially freeze before adding the next to keep them clean and defined.
  • Use a piping bag or zip-top bag for neater layers.
  • Taste each layer before freezing and adjust sweetness as needed.
