Thanksgiving Casserole with Leftovers

This Thanksgiving Leftover Lasagna is made with layers of tender shredded turkey, savory stuffing, tangy cranberry sauce, and creamy mashed potatoes. All baked together into a cozy casserole that is perfect for using up leftovers and giving them new life. Serve warm with leftover gravy!

Ingredients

(Amounts are flexible — use what you have!)

  • Leftover cooked turkey shredded or chopped (about 3–4 cups)
  • Leftover stuffing about 3 cups
  • Cranberry sauce whole berry or jellied, about 1–1½ cups
  • Leftover mashed potatoes about 3–4 cups
  • Leftover turkey gravy for serving

Instructions

  • Preheat oven to 375°F (190°C).
  • Lightly grease a 9×13-inch casserole dish.
  • Spread the shredded turkey evenly across the bottom of the dish.
  • Add a layer of leftover stuffing on top of the turkey.
  • Spoon cranberry sauce evenly over the stuffing layer.
  • Gently spread the mashed potatoes over the top, covering the entire casserole.
  • Cover with foil and bake for 30 minutes.
  • Remove foil and bake an additional 10–15 minutes, or until heated through and lightly golden on top.
  • Remove from oven and let rest for 5–10 minutes before serving.
  • Serve warm with leftover gravy spooned over the top.

Notes

  • This recipe is intentionally flexible—use more or less of each ingredient depending on what leftovers you have.
  • If your mashed potatoes are thick, you can spread them more easily by warming them slightly first and adding a little milk
  • Add a sprinkle of shredded cheese (like mozzarella or cheddar) on top before baking.
  • Great for the day after Thanksgiving or for freezing in portions.
