Ingredients

  • 1 3.9 oz box instant chocolate pudding mix
  • 2 cups cold milk
  • 1 cup Cool Whip thawed
  • 1 teaspoon vanilla extract
  • Mini chocolate chips optional

Instructions

  • In a large mixing bowl, whisk together the instant chocolate pudding mix and cold milk for about 2 minutes until smooth and slightly thickened.
  • Let the pudding sit for 3 to 5 minutes so it can fully set and thicken.
  • Gently fold in the Cool Whip and vanilla extract until the mixture is smooth, creamy, and fully combined.
  • If desired, stir in mini chocolate chips for extra texture and chocolate flavor.
  • Spoon or pour the mixture into popsicle molds, leaving a little room at the top for expansion while freezing.
  • Insert popsicle sticks and freeze for at least 8 hours, or until completely firm.
  • To remove the popsicles from the molds, run warm water over the outside of the mold for a few seconds before serving.

Notes

  • Whole milk creates the creamiest texture, but coconut milk can also be used.
  • Store leftover popsicles in an airtight container or freezer-safe container to help prevent freezer burn.
  • Add a pinch of salt or extra chocolate chips for even richer flavor.
  • If you do not have popsicle molds, use paper cups and wooden popsicle sticks instead.
