Coffee Popsicles
These easy coffee popsicles are made with instant chocolate pudding mix and cold brewed coffee instead of milk for a rich, creamy frozen coffee treat. Perfect for hot summer days and coffee lovers alike!

- 2 3.9-ounce boxes instant chocolate pudding mix
- 4 cups Cold brewed coffee amount called for on the pudding package instructions (used in place of milk)
In a large mixing bowl, prepare both boxes of instant chocolate pudding according to the package directions, replacing all of the milk with cold brewed coffee.
Whisk until the pudding mixture is smooth and begins to thicken.
Allow the pudding to set according to the package directions.
Once the pudding has fully thickened, spoon or pour the mixture into popsicle molds, filling each mold nearly to the top.
Insert popsicle sticks if needed.
Freeze for at least 6 hours, or until completely firm.
To remove the popsicles, run the molds briefly under warm water and gently pull them out.
- Cold brew coffee produces the smoothest flavor, but chilled brewed coffee works well too.
- For a sweeter popsicle, use sweetened coffee or add a little sugar to taste before preparing the pudding.
- Store popsicles in the freezer for up to 2 months.
- Makes approximately 10 popsicles, depending on the size of your molds.
