How to Make it
See recipe card below this post for ingredient quantities and full instructions.
Step 1: Brew Your Coffee
Start by making a batch of good coffee and allow it to cool completely.
For the best coffee flavor, use:
- Fresh coffee from a french press
- Cold-brew coffee
- Dark roasts
- Freshly ground coffee beans
- Whole beans ground just before brewing
You can even use instant coffee if that’s what you have on hand.
Step 2: Prepare the Pudding
Follow the instructions on the pudding box, but replace all of the milk with cold coffee.
Whisk until smooth and allow the pudding to set according to package directions.

Step 3: Fill the Popsicle Molds
Once the coffee mixture has thickened, carefully spoon or pour it into your popsicle molds.
Fill each mold almost to the top, leaving a little room for expansion as the popsicles freeze.
If using wooden popsicle sticks, insert them once the pudding has partially frozen or according to your mold’s instructions.
Step 4: Freeze
Place the molds in the freezer for at least 4-6 hours, or until completely frozen.
For best results, leave them overnight.

Step 5: Enjoy
To remove the popsicles, run warm water briefly over the outside of the molds.
Enjoy immediately for the ultimate caffeine boost on a hot day.

Pro Tips
